Ok ya'll, this is seriously AMAZING!
I served this on top of brown rice. Could also use quinoa, couscous, rice pasta, etc.
3/4 cup salsa
1/3 cup natural peanut butter
1 Tbs Low sodium soy sauce
Cilantro and ginger to taste.
Place 3-4 chicken breasts in crockpot and season with black pepper. Pour mixture on top of chicken and cook on low for 8 hours.
