Sweet and Sour Stir Fry

BOIL 1 Cup Broccoli and 1 cup Carrots

 

HEAT oil over medium pan and add in Boneless, skinless chicken breast (cut in slices) AND 1 Red Pepper (sliced)

 

STIR in the Broccoli and Carrots 

 

In separate bowl, mix 1/3 cup Ketchup, 2 TBSP Teriyaki sauce, 1 TBSP sugar, 1 can pineapple (and juice), then pour this mixture onto chicken.  Stir-Fry.

 

Serve with Brown Rice or Quinoa
