2 cups Rice (brown, jasmine) cooked
2 cups chops spinach
1 cup mushroom pieces
2 cloves, minced garlic
1 tbsp olive oil
1/2 cup chopped onion
12 oz fat free chicken broth (low sodium)
Follow directions for brown rice.
Add in olive oil to large skillet. Add in the onion and minced garlic. Sautee the onions. Add in spinach and sautee until tender. Add in mushrooms and sautee until tender. Add chicken broth and cooked rice.
Cover and cook on low for 10-15 minutes.
