Spicy Italian Meatballs

2c quinoa
1 package of lean ground chicken or turkey 
Salt & Pepper to taste preference 
Mrs. Dash extra spicy to taste
2 egg whites 
2T minced garlic 

1. Cook quinoa 
2. Combine all ingredients in a large mixing bowl 
3. Scoop into tablespoon size balls (I like using a cupcake pan)
4. Bake at 425• for 30 min 

PREP SMART SUGGESTION: Enjoy your meatballs with spaghetti squash and drizzle with red sauce.
