Gluten Free Nutty Bread

 

3 cups almond meal (I use raw almonds and grind them to a powder in the food processor)
1 1/2 cups arrowroot powder OR 1/2 cup coconut flour (coconut flour... reduces the starch content)
1/2 cup ground flax
Tsp of sea salt and baking soda
8 omega eggs
1 Tbs apple cidar vinager
1 tps liquid stevia
3/4 cup each of the following (chopped) walnuts, hazelnuts and pistachios
1/2 cup pumpkin seeds sunflower seeds and seasame seeds

Beat eggs, vinager and stevia. Add in all other ingredients. Bake at 320 degrees for about a 30 minutes....top will be nice 'n golden. It sooo good but dont eat tooo much....its very high in fiber.  Ha! :)
