Beef & Bean Enchiladas

(8 servings. 300 Cal. Pro 26 g. Carb 30 g. Fat 8 g.)


-1 lbs lean ground beef
-1 can Fat Free refried beans
-1 can enchilada sauce
-1 cup plain greek yogurt
-1 cup 2% mexican shredded cheese 8 mission carb balance tortillas


Brown ground beef, add 1 can of refried beans and 1 can enchilada sauce. Mix together & let simmer. Distribute mix across tortillas. Roll up each tortilla & place side by side in baking dish. Spread greek yogurt evenly over tortillas and top w/ shredded cheese. Bake for 20-30 minutes at 350 degrees.
