Chicken Quesadilla with Cilantro Avocado “Dip” and Broccoli
2 low carb, high fiber tortillas
4 oz chicken breast (shredded or cubed. I like to put mine in the crockpot w/ chicken broth and shred)
28g skim mozzarella cheese
1/4c Greek yogurt
1 TBSP boathouse farms cilantro avocado dressing
Spray pan with coconut oil and turn on med-high heat. Place tortillas in skillet. Add all ingredients inside, then place the other tortilla on top. Make sure to flip so both sides are lightly browned and crispy. Or, if you have a quesadilla maker, that would be even better :) Then drizzle dip on top of quesadillas when finished.
